1 egg (slightly beaten)
1/2 cup sugar
1/4 cup butter (melted)
2 cups flour
4 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons sugar
4 to 6 medium apples
1 cup milk
1 teaspoon cinnamon
2 tablespoons butter (melted)
2 egg yolks (beaten)
1/2 cup heavy cream
Preheat oven to 400 degrees. Grease a 9 x 13 inch pan. Combine egg, milk and 1/4 cup melted butter, mix well. Sift together flour, baking powder, salt and 2 tablespoons sugar. Stir egg mixture into dry ingredients, do this quickly, it will form a soft moist dough. Spread this in the greased pan. Pare (peel) and core the apples, cut into eighths, place apple slices in rows on the dough.
Combine 1/2 cup sugar and cinnamon, sprinkle over the apples. Bake for 10 minutes. Remove from the oven. In a small bowl mix the 2 tablespoons of melted butter, egg yolks and 1/2 cup heavy cream then dribble it over the apples. Return to oven and bake 20 to 25 minutes longer. Serve warm or cold.
