Apple Turnovers

1 cup flour
1 cup shortening
1 teaspoon salt
9 to 10 tablespoons cold water

Combine:

2/3 cup sugar
1/4 teaspoon nutmeg
1 teaspoon cinnamon
4 cups sliced apples
1/4 teaspoon cloves
butter

Sift flour and salt together, cut in shortening. Sprinkle water into flour mixture (a fork works) just until moistened – too much mixing makes the dough tough. Roll out on a floured board or between two pieces of waxed paper. What you need is ten five inch squares so you need to get it as square as you can.

Combine sugar and seasonings. Divide 4 cups of apples among the ten squares then sprinkle with the sugar mixture, dot (see glossary) with butter then moisten edges of pastry squares. Fold over so as to form a triangle, seal edges with a fork. Put holes in top for steam to escape then brush with milk and sprinkle with sugar. Place on a baking sheet and bake in a 425 degree oven for 30 to 35 minutes until tops are golden brown.
