Baked Apples with Orange Sauce
6 Large cooking apples (Rome or Fuji)
1 cup sugar
1 1/2 cups water
3/4 cup strained orange juice
1 tablespoon grated orange peel
Preheat over to 450 degrees.
1. Wash and core apples.
2. Peel about 1/3 down from the top (this keep the apple from splitting)
3. Place in casserole or deep pan peeled side up.
4. Boil 3/4 cup of the sugar and the water together for 5 minutes.
5. Pour over the apples.
6. Cover and bake in preheated oven until tender, about 30 to 40 minutes
7. Sprinkle remaining sugar (1/4 cup) over apples.
8. Place uncovered, under boiler until brown.
9. Drain syrup from apples – remove apples to a plate then pour off syrup to a saucepan.
10. Add orange juice and rind to syrup, boil for 10 minutes over medium heat.
11. Pour syrup over apples and chill.
12. Serve plain or with whipping cream. Serves 6, of course.
