1 medium sized eggplant
sea salt to taste
1 to 2 eggs, well beaten
3/4 cup dried breadcrumbs
butter
Slice unpeeled eggplant crosswise into 1/4 inch thick rounds. Sprinkle with salt then dip each slice into the beaten egg, then into the bread crumbs.
Grease a baking sheet, use organic olive oil cooking spray. Sprinkle lightly with salt and pepper. Dot each slice with butter. Bake in a 450 degree oven for about 20 to 25 minutes or until tender.
