Beans - Green and Yellow (Wax Beans)
Fresh, frozen and canned, these beans are everywhere. In casseroles, soups, salads and just alone. By the time we are 2 years old we have experienced beans in one form or another. If you have to buy canned at least buy Organic, even the grocery stores have them now (it's "IN" to eat Organic). If you buy them fresh look for bright colors (green or yellow), firm (no wrinkles) and crisp.
Preparation: Wash with your safe veggie wash, cut off both ends. You can leave them whole, French cut (lengthwise into thin strips) also known as "string beans" or just cut them into 1 inch pieces.
To Cook: In a medium saucepan bring 1 inch of salted water to a boil (about 1/2 teaspoon or less of salt to a cup of water). Add the beans and cook uncovered for about 5 minutes then cover and cook for about 10 to 15 minutes or until tender for whole or cut beans. Cook the French cut for 5 to 10 minutes.
For yellow (wax beans) cook uncovered for about 15 to 20 minutes for whole or cut beans and cook 10 to 15 minutes for French cut beans.
Frozen beans: follow the package directions.
