2 tablespoons lemon juice
1/2 teaspoon salt
1 teaspoon prepared mustard
1 egg
1 cup vegetable oil (or 1/2 cup vegetable oil and 1/2 cup olive oil)
Combine the lemon juice, salt, mustard, egg and 1/4 cup of the oil in the blender. Run at high speed until smooth. Remove the top and slowly pour in the remaining oil and continue to mix until it thickens, this could take 2 to 3 minutes. Makes about 1 1/2 cups. Keep refrigerated.
