Butterscotch Squares

1/2 cup evaporated milk
1/2 cup dates (chopped)
1/2 cup raisins
1 cup flour
1/4 cup powdered sugar
1/2 cup margarine or butter
1 egg
1/4 cup sugar
1 (4 ounce) package butterscotch pudding
1 1/2 teaspoon baking powder
1 2/3 cup coconut

Preheat oven to 350 degrees. Grease an 8 x 8 inch cake pan.

1. In a bowl combine milk, dates and raisins. Let stand for 30 minutes.

2. In a separate bowl sift the flour and sugar, cut in the margarine.

3. Press into the prepared pan. Bake for 20 minutes.

4. In a large bowl combine egg, sugar, pudding, baking powder with the date mixture. Mix well.

5. Stir in coconut then pour over the baked crust.

6. Bake for 40 minutes.

7. Cool and cut into squares.
