Butter Steamed Fresh Broccoli

1 1/2 pounds of broccoli
2 tablespoons butter or margarine
7 tablespoons water (using 4 tablespoons then 3 tablespoons)
Cut off dried and uneven parts of the stem. Cut up the stem into 1 inch pieces, cut the florets off of the stems and separate them into small clusters.
Use a large heavy frying pan at least 10 inches wide. Melt the butter over high heat, it will begin to brown slightly almost as it melts, this is okay. Add the broccoli stems. Cover and cook, stirring occasionally, for about 4 to 5 minutes. Then stir in the broccoli florets adding the 3 tablespoons of water, cover and cook for 3 minutes longer. Stir frequently.
Variation: Broccoli with Cream Cheese. Right after cooking the broccoli add 1 package (3 ounce) of cream cheese diced (you can use the light or low fat). Stir until melted then sprinkle with 1 tablespoon lemon juice.
