Caramelized Ham with Walnuts

2 ham slices about 1 pound each
2 teaspoons vinegar
2 tablespoons dark brown sugar (the regular kind will do too)
1/2 cup chopped walnuts
2 tablespoons vegetable oil
2 cups boiling water
1/2 cup Sherry
Mix the vinegar and sugar in a small bowl then rub it into each ham slice, both sides. Let stand (on a plate) for about 15 minutes. In a large frying pan lightly toast the walnuts in the oil. Remove from the pan with a slotted spoon.
Over high heat quickly brown the ham steaks on both sides in the hot oil (lower heat if oil starts to smoke). This process caramelizes the sugar and is important to the color and flavor. To the pan add the toasted walnuts, boiling water and the Sherry. Cook over low heat until all the liquid has almost evaporated and the ham is tender. Serve with nuts on top of the ham.
