8 to 10 medium sized carrots
boiling and salted water
4 Pippin or Granny Smith apples
1/2 cup brown sugar (packed)
salt and pepper to taste
1 1/2 tablespoons butter or margarine

Clean carrots, cut in half if needed, then boil the carrots in the salted water for 10 minutes, drain. Cut into thin slices. Set aside. Peel and core the apples, slice thinly. In a greased casserole dish arrange alternate layers of the carrots and apples, sprinkling each layer with the sugar, salt, pepper and dot with butter.

Cover and bake in a 350 degree oven for 45 minutes to an hour or until carrots and apples are tender. Uncover the casserole during the last 10 minutes. Enough for 6 or more.
