Cauliflower
When shopping choose creamy white, firm compact heads. Do not buy if the head has brown spots or it looks like it is coming apart and the green parts are dry and shriveled. Buy organic.
This is a vegetable, in my opinion, that has "acquired taste" written all over it. Getting kids to eat it is a challenge. It can be served cooked with butter and seasonings, cheese sauces, put in soups and salads. Steam, bake, boil or eat it raw with dips.
Preparation: Remove the outer leaves and the stalk. Break into flowerets.
To Cook: Heat about 1 to 2 inches of water in a saucepan, bring to a boil and add the cauliflower. Cover and bring back to a boil, reduce to a gentle boil and cook until tender, about 10 to 12 minutes. Use a fork or metal skewer to test for doneness.
