Cheddar Bacon Deviled Eggs
12 uncooked eggs
1/2 cups mayonnaise
4 slices bacon
2 tablespoons finely shredded Cheddar cheese
1 tablespoon yellow mustard
1. Place eggs in large saucepan or kettle. Cover with cold water.
2. Bring water to a boil then immediately remove from heat. Cover and let stand for 10 to 12 minutes.
3. Drain the hot water and cover the eggs with very cold water. Peel under cold running water. Set aside to finish cooling.
4. While the eggs are cooling place bacon in a heavy skillet, fry until crispy.
5. Drain bacon by wrapping in paper towels. Crumble and set aside.
6. Cut eggs in half lengthwise and remove yolks.
7. Place yolks, in a small bowl and mash until smooth.
8. Add mayonnaise, crumbled bacon and cheese, mix well.
9. Stir in the mustard.
10. Fill halves with yolk mixture, refrigerate until served.
