2 eggs, beaten
3 tablespoon vegetable oil
1 cup chopped, finely shredded cooked chicken or shrimp or ham or pork or beef (this is optional but it is more of a meal with the meat)
8 green onions sliced very thin
4 cups cold cooked rice – better if made the day before or early in day and refrigerated – it fries up better.
2 - 3 tablespoons soy sauce
1/2 teaspoon sugar (optional)
Sauté the cold rice in a large pan over medium heat – it takes about 15 minutes – until golden brown. Add the meat if you prefer. Pour the beaten eggs over the rice and stir quickly until the egg is set (cooked). Sprinkle the soy sauce and onion over the rice mixture just until blended. Serve hot. Serves 4 to 6.
