Chocolate Cherry Cake
1/2 cup shortening
1 cup sugar
1 egg
2 (1 ounce) squares of unsweetened chocolate (melted)
1 1/2 cups flour
1 teaspoon soda
3/4 teaspoon salt
1 cup milk
1/4 cup chopped maraschino cherries
2 tablespoons cherry syrup (use syrup from jar of cherries)
1/2 cups walnuts (chopped)
Preheat oven to 350 degrees. Grease and flour an 8 x 8 x 2 inch pan.
Cream shortening in large mixing bowl, gradually add the sugar. Cream until light and fluffy scraping bowl often. Add egg and beat well. Stir in the chocolate until well blended. In a separate bowl stir together the sugar, flour, soda and salt then add to the shortening mix alternately with the milk. Beat well after each addition. Finally add the cherries, syrup and nuts. Mix well. Pour into prepared pan and bake for about 40 minutes or until a toothpick inserted into the middle comes out clean. Cool and frost with a chocolate frosting.
