Chocolate Pudding
3 cups milk
2/3 cup sugar
4 1/2 tablespoons cornstarch
1/2 teaspoon salt
1 1/2 squares chocolate (1 ounce size)
1 teaspoon vanilla
1 tablespoon butter
1. Put all but 1/2 cup of the milk in the top half of a double boiler to heat. Water in the bottom half should be boiling.
2. Cut the chocolate into small pieces and add to the milk. Mix well into the milk after it melts.
3. In a mixing bowl measure the sugar, cornstarch and salt. Mix well.
4. Slowly add the 1/2 cup milk into the dry ingredients and mix until smooth.
5. Gradually add the milk, sugar, cornstarch mixture to the double boiler milk and chocolate mixture. Use a wire whip.
6. The chocolate may not be entirely blended but it will be by the time the pudding is cooked.
7. Continue stirring while the mixture cooks and thickens. Cook about 5 minutes.
8. Remove from heat.
9. Add the vanilla and butter, stir them in.
10. Pour into a large dessert dish or individual dessert dishes.
11. Cover bowl or dishes with plastic wrap to prevent a skin from forming on the pudding.
12. Refrigerate.
