Chocolate Sandwich Cookie Dessert
18 chocolate sandwich cookies (crumbled)
1 can (20 ounce) crushed pineapple (reserve liquid)
1 box orange jello
8 eggs
2/3 cup sugar
1. Separate eggs, set whites aside.
2. In a deep bowl beat egg yolks until light yellow then add 1/3 cup of the sugar.
3. Add the juice drained from the pineapple.
4. Pour into a double boiler and cook until thickened.
5. Add pineapple and jello. Let cool. This is the filling.
6. In a separate bowl beat the egg whites until stiff then add the remaining 1/3 cup sugar.
7. Add the cooked filling to the egg whites, fold in with a large spoon until blended.
8. Spread one half of the crumbled cookies in a 9 x 13 inch pan. Pour the filling over cookies and top with the remaining cookie crumbs. Chill then cut into squares.
