Coconut Bars
1 cup flour
1/2 cup brown sugar (packed)
1/2 cup butter or margarine
Preheat oven to 350 degrees. Grease a 8 x 8 or 9 x 9 inch pan.
In a bowl mix the flour, brown sugar and butter until crumbly. Pat into the greased pan and bake for about 10 minutes. Remove from oven. Set aside.
Topping:
2 eggs
1 cup brown sugar (packed)
1 teaspoon vanilla
3 tablespoons flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups coconut
1 cup nuts (pecans or walnuts)(chopped)
1. In a large bowl beat the eggs until frothy, add the brown sugar and vanilla, mix well.
2. In a separate bowl combine the flour, baking powder and salt.
3. Add to the egg mixture, stir until well mixed.
4. Mix in the coconut and nuts.
5. Spread evenly over the brown sugar crust and bake in the preheated oven for 30 minutes.
