10 cups of finely chopped or shredded cabbage
1/2 cup chopped green pepper (packed)
1/2 cup chopped celery (packed)
1/2 cup pimiento (chopped)(packed)(about 4 ounces)
1/4 cup finely chopped onion (packed)
Combine all of the above in a large bowl and mix thoroughly. Pour boiling dressing over the cabbage mixture. Cover and place in the refrigerator. Chill several hours, stir once. Best if served the next day. Will keep in the refrigerator about 3 weeks.
Dressing:
1/2 cup honey
1/3 cup vegetable oil
3/4 cup cider vinegar
2 tablespoons sugar
2 teaspoons salt
Combine all in a medium saucepan then bring to a boil over medium heat. Stir occasionally.
