2 lbs of cleaned fish (trout, sunfish, bluegill, perch, etc)
1 egg
2 tablespoons water
1 cup fine dried bread crumbs
1 cup cornmeal
1 cup biscuit mix or flour
Combine bread crumbs, cornmeal and flour in a pie pan, mix well. Season the fish with salt and pepper. Beat the egg with the water. Dip the fish in egg then in the crumb mixture. Fry in butter or margarine over medium to low heat until golden brown. Fry on each side until fully cooked. Fish will flake easily with a fork when done.
