Easy Chocolate Cake
1 package chocolate cake mix
1 (3.4 ounce) package of instant chocolate pudding mix
4 large eggs
2 to 3 teaspoons instant coffee dissolved in 3/4 cup warm water
1/2 cup vegetable oil
1/2 cup sour cream
1/2 cup white chocolate chips
1 tablespoon milk
Preheat oven to 350 degrees. Lightly grease and flour a 12 cup bundt cake pan.
In a large bowl combine the cake mix, pudding mix, eggs, coffee mixture, oil and sour cream. Beat with an electric mixer at high speed for about 2 minutes scraping the bowl often. Pour the batter into the bundt pan and bake for about 40 minutes or until a toothpick inserted in the cake comes out clean. Cool the cake for about 15 minutes then invert onto a cake plate and let cool completely.
Glaze:
In a small saucepan combine the 1/2 cup white chocolate chips and the milk. Heat over low heat until chips are completely melted, stirring constantly. Let glaze sit until warm then drizzle over cooled cake. Let stand for about 30 minutes and serve.
