Eggs Florentine Casserole

2 packages (10 ounces each) frozen chopped spinach
2 tablespoons minced onion
2 tablespoons lemon juice
1/2 cup shredded Cheddar cheese
4 hard cooked eggs (sliced)
3 tablespoons butter or margarine
3 tablespoons flour
1/2 teaspoon salt
1/2 teaspoon dried mustard
1/4 teaspoon pepper
2 1/4 cups milk
1/2 cup dried bread crumbs
1 tablespoon butter or margarine melted

Preheat oven to 400 degrees.

1. Cook the spinach according to package directions, drain.
2. Put spinach in a large bowl and add the onion and lemon juice.
3. Spread spinach in an ungreased 8x8x2 inch ungreased baking dish.
4. Sprinkle with the shredded cheese and top with the eggs.
5. In a saucepan melt the 3 tablespoons of butter over low heat.
6. Blend in the flour, salt, mustard and pepper.
7. Cook over low heat, stirring constantly, until the mixture is smooth and bubbly.
8. Remove from heat and stir in the milk.
9. Again return to heat and bring to a boil, stirring constantly.
10.Boil and stir one minute then pour over the eggs.
11.Toss bread crumbs in melted butter and sprinkle over the sauce.
12. Bake in preheated oven for about 20 minutes.
