Fish Baked in Wine

2 pounds fish fillets or slices (sole, halibut, cod and salmon – most fish)
salt and pepper
1 large onion sliced
1 cup dry white wine
3 tablespoons butter or margarine
2 large tomatoes, peeled and sliced thinly
1/2 green pepper sliced thin
2 teaspoons Worcestershire

Season fish with salt and pepper. Put fish in pan or bowl and cover with the sliced onion then pour wine over the whole thing. Marinate for 30 minutes.

Melt the butter in a large shallow baking dish. Remove the fish and onion from the wine and place in the baking dish. Cover with the tomatoes and green pepper, sprinkle with salt. Take the wine the fish was marinated in and mix in the Worcestershire sauce. Baste the fish with the wine mixture while it is baking – use a baster.

Bake in a 375 degree oven for about 35 minutes or until the fish flakes with a fork and is no longer translucent in the center. About 4 to 6 servings.
