Fluffy 4 Minute Frosting
You will need a double boiler for this recipe. This is a white frosting and if you want color add a couple of drops of food coloring.
1 cup sugar
3 tablespoons cold water
2 egg whites
1/2 teaspoon cream of tartar
1/4 teaspoon salt
1 teaspoon vanilla
1. Mix all the ingredients except the vanilla in the top of the double boiler.
2. Fill the bottom pan with enough hot water so the top fits well into the water.
3. Remove top pan and set aside.
4. Bring the water to a rolling boil.
5. Remove from heat and place the top of the double boiler into the boiling water.
6. With an electric mixer beat on high for about 4 minutes. Do not place back on heat.
7. Add vanilla. Mix well.
This makes enough frosting for a large double layer cake or a 9 x 13 inch cake.
