Fresno Pudding
This recipe was in an old cookbook of mine that had a lot of recipes from California. Fresno Pudding was tucked away with a lot of other strange recipes I had never seen. If you like raisins you'll love "Fresno Pudding".
1 cup flour
2/3 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 cup seedless raisins
1/2 cup milk
2 cups water
1 cup brown sugar (packed)
2 tablespoon butter or margarine
whipping cream
Preheat oven to 350 degrees. Grease a 9 x 9 inch baking pan
1. Sift flour, sugar, baking powder and salt together into a mixing bowl.
2. Stir in the raisins then the milk. Stir just to blend well.
3. Pour batter into prepared 9 x 9 inch baking pan.
4. In a large saucepan heat the water, brown sugar and butter.
5. Stir until sugar is dissolved.
6. Pour the syrup over the batter in the baking pan. The syrup may seem too thin but the batter will rise through it and mix to make a delicious sauce.
7. Bake in the preheated oven for 30 to 40 minutes.
8. Serve warm with whipping cream. Makes 6 to 8 servings.
