Frostings

You ask yourself "Why should I make frosting when I can go to the grocery store and just buy a container that is ready to spread on the cake?" The frosting you make at home has what you put in it. The supermarket variety has ingredients that most of us don't keep on our kitchen shelves. Homemade tastes better and it is such a "win" to look at a cake and know that you made it from scratch. Maybe it doesn't get any awards for appearance but it tastes better than any boxed or bakery cake.

These recipes for frostings are very basic, they do not call for exotic sugars, spices or ingredients that will cost you an arm and a leg. I do suggest that you invest in the following:

1. a candy thermometer
2. a double boiler
3. several sizes of rubber spatulas (they now come in silicone too)
4. an icing spatula or sandwich spreader, I like the sandwich spreader, it's smaller and easier to use.

All of the recipes here have been tested by some of the most experienced cooks. They are the women, and some men, who have been cooking and baking for their families for many years.
