1 1/2 pounds fresh green beans cut into 1-inch pieces (about 6 cups) or
6 cups frozen cut or French-style green beans
2 to 4 teaspoons lemon juice
2 teaspoons margarine (melted)
1/4 cup sliced almonds
Cook the fresh green beans in a covered saucepan with about an inch of water, over medium heat for about 20 to 25 minutes until crisp-tender. (Or cook frozen beans according to package directions, omit any margarine, butter or salt)
While the beans are cooking stir together the lemon juice and melted margarine in a small bowl. Toast the almonds in a small skillet over medium heat until golden, stirring constantly, this will take about 5 to 7 minutes.
After the beans are finished cooking, drain and place in a serving bowl. Pour the lemon mixture over the beans and toss to coat. Gently stir in the almonds. Serve immediately. About 8 servings.
