Green Sauce

1 slice white bread with the crust removed
1/4 cup vinegar
3 anchovy filets (finely chopped) (or 1/2 teaspoon anchovy paste)
1 cup finely chopped fresh parsley
1 1/2 teaspoons chopped capers
2 garlic cloves (crushed)
1 1/2 teaspoons grated onion
4 teaspoons olive oil
1/2 teaspoon sugar
2 tablespoons vinegar

Soak bread in the 1/4 cup vinegar, in a medium bowl. Mix in the anchovy, parsley, capers, cloves, onion, olive oil and sugar to the vinegar soaked bread. Mash and beat into a smooth paste (a food blender would help). Stir in 2 tablespoons vinegar and more olive oil if needed to desired consistency.
