Hard-Cooked Eggs
Cold Water Method:
1. Place the eggs in a saucepan and add enough cold water to cover the eggs plus an inch.
2. Heat very rapidly to boiling.
3. Remove from heat and cover. Let stand for 22 to 24 minutes.
4. Immediately cool eggs in very cold water, this stops the cooking process and helps to remove the shell.
5. Tap the egg to crack the shell then roll the egg between your hands, this cracks the shell more and makes it easier to remove it.
6. Hold egg under cold running water to help ease off the shell.
Boiling Water Method:
1. Place eggs in a bowl of warm water, this keep the shells from cracking when you place them in the boiling water.
2. Fill a saucepan with enough water to cover the eggs plus and inch.
3. Heat to boiling.
4. With a spoon transfer the eggs from the bowl to the pan. Ease the eggs into the water slowly.
5. Reduce the heat to simmer or the lowest setting and cook for about 20 minutes.
6. Cool the eggs in very cold water to stop the cooking process.
7. Tap the egg to crack the shell then roll between your hand to loosen the shell.
8. Hold egg under running cold water to ease the shell off the egg.
