2 pounds beets cooked and peeled (about 5 to 6 medium beets)
1/3 cup sugar
1 tablespoon corn starch
1/2 teaspoon salt
1/2 cup water
1/4 cup vinegar
Slice the cooked beets into thin slices an place in a large mixing bowl. Set aside. In a small saucepan mix the sugar, corn starch and salt, add water and mix. Cook over medium to low heat, stirring constantly until mixture thickens and turns clear. Add the 1/4 cup vinegar and pour over the beets
