Lumber Jack Cake
1/2 cup shortening
1 cup sugar
2 eggs (beaten)
1 1/2 cups applesauce (unsweetened)
1 teaspoon baking soda
2 1/4 cups flour
1 teaspoon cinnamon
1/2 teaspoon cloves
1 teaspoon baking powder
1/4 cup blackstrap molasses (unsulphered)
1 1/2 cups raisins (ground)
Preheat the oven to 350 degrees. Grease two small loaf pans.
Combine in a small bowl the applesauce and soda, set aside. Sift together the sugar, baking soda, flour, cinnamon, cloves and baking powder. Cream the shortening and sugar then add the beaten eggs, mix well. Cream the sifted dry ingredients alternately with the applesauce. Stir in the molasses and raisins. Pour into prepared loaf pans. Bake in the preheated oven for about 1 hour.
