Cook a package of large frozen artichoke hearts (drained) or use canned artichoke hearts (drained).
2 tablespoons lemon juice
2 tablespoons olive oil
1 clove garlic (crushed)
1/4 teaspoon salt
dash of pepper
lemon (sliced very thin)
Mix the lemon juice, olive oil, garlic, salt and pepper in a small bowl. Put the artichoke hearts in a bowl and pour the lemon juice mixture over them. Chill for several hours spooning the juice over them several times. When serving drain then arrange on a plate or serving dish, tuck in thin lemon slices.
