1 can tomato paste
2 tablespoons olive oil
1 clove garlic
2 1/2 cups warm water
1 onion (chopped)
1 bay leaf
1/2 pound chopped lean beef or pork (lean ground beef or ground pork)
salt and pepper to taste
Brown onion, garlic in olive oil in a sauce pan, set aside. Brown beef (or pork) in a separate frying pan, drain fat and add to the onion and garlic mixture. Add the tomato paste, stir and cook for 3 minutes. Add salt and pepper, water and bay leaf. Cover and simmer for 1 hour. Stir occasionally. Remove bay leaf and simmer for about 30 minutes longer. Serve hot over your choice of pasta.
