Mini Ham Quiches
3/4 cup cooked ham
1/2 cup shredded sharp cheddar cheese
1/2 cup chopped ripe olives
3 eggs (beaten)
1 cup half and half cream
1/4 cup butter (melted)
3 drops hot pepper sauce
1/2 cup biscuit mix
2 tablespoons grated Parmesan cheese
1/2 teaspoon ground mustard
Preheat oven to 375 degrees. Grease a 12 cup muffin pan.
1. In a large bowl combine the ham, cheddar cheese and olives.
2. Divide mixture up among the 12 muffin cups.
3. In a bowl combine the eggs, half and half, butter, hot pepper sauce, biscuit mix, Parmesan cheese and ground mustard just until blended.
4. Pour over the ham mixture.
5. Bake in the preheated oven for 20 to 25 minutes or until a knife inserted in the center comes out clean. Let stand for 5 minutes before serving.
