Mini Turkey Frittatas
1/4 pound turkey Italian sausage links (remove casings)
1 1/2 cups frozen shredded hash brown potatoes (thawed)
1/2 cup chopped onion
1 garlic clove (minced)
1 teaspoon olive oil
1/3 cup water
1 teaspoon dried oregano
1 teaspoon thyme
1/2 teaspoon salt
1/4 teaspoon pepper
3 eggs
2 eggs whites
1 cup buttermilk (use 1% milk)
2 tablespoons flour
1/4 cup shredded Parmesan cheese
3/4 cup salsa
Preheat oven to 350 degrees. Lightly grease one 12 cup muffin pan.
1. In a skillet cook the sausage over medium heat until it is no longer pink.
2. Remove with a slotted spoon to drain on paper towels.
3. Throw away the drippings.
4. In the same pan sauté the potatoes, onion and garlic in oil until the potatoes are a golden brown, about 5 minutes.
5. Add water, seasonings and sausage, cook and stir over medium heat until the water has evaporated.
6.In a bowl combine the eggs, egg whites, buttermilk, flour and Parmesan cheese.
7. Stir in the sausage mixture, mix well.
8. Fill muffin cups 3/4 full.
9. Bake in the preheated oven for 20 to 25 minutes or until a knife inserted in the middle comes out clean.
10. Carefully run a knife around the edge of the cups to loosen them up.
11. Serve warm.
