New Potatoes

Just exactly what are "New Potatoes"??? New to what?? I looked it up and according to my sources "New Potatoes" are freshly harvested (dug up) and have never been stored. But then another source said it is any potato that is small and harvested before it has reached full size. I know one thing, they are small. I have never seen a large potato called a "New Potato". Recipes calling for "New Potatoes" call for small potatoes. So I guess the term "New Potato" has more than one meaning, depending on who is using it. I believe my Grandmother: "new potatoes" were dug up early summer, they were small and mostly round.

Look for small, nicely shaped, firm potatoes. The skins should be unblemished with no cuts or gouges. They can be of any variety although the red ones boil up the best.

Preparation: Wash potato under running water with a vegetable brush.

To Cook: Place potatoes in a large saucepan or kettle (depending on how many you are boiling. Cover with water and heat to boiling over medium to medium high heat. If they start to boil over reduce the heat a bit. Cook over medium heat for about 20 to 25 minutes or until tender.
