No Yolk Deviled Eggs
This recipe uses potato instead of the egg yolks.
6 uncooked eggs
1 medium potato (peeled and diced)
1 tablespoon sweet pickle relish
1 teaspoon sugar
1 tablespoon mayonnaise
1 teaspoon prepared yellow mustard (or to taste)
1 pinch of paprika (for the tops)
1. Place eggs in a large saucepan and cover with cold water.
2. Bring to a boil then remove from heat.
3. Cover and let stand for 10 minutes.
4. Drain off hot water and cover with very cold water.
5. Peel eggs while running them under cool water. This helps to get the shells off without damaging the whites. Set aside.
6. Place the potato in a saucepan with enough water to cover by one inch.
7. Bring to a boil and continue to cook until tender. Drain.
8. Cut the peeled eggs in half and remove the yolks. These won't be used in this recipe so you can either use them or discard. Set whites aside.
9. Put cooked potatoes in a medium bowl and mash or whisk until smooth.
10. Blend in the relish, sugar, mayonnaise and mustard, mix well.
11. Spoon potato mixture into egg whites and dust with paprika.
12. Keep refrigerated until ready to serve.
