Oh So Yummy Pepper Steak

1 1/2 lb sirloin steak
1/2 teaspoon salt
1 cup diced onion
1 cup canned beef broth
3 tablespoons soy sauce
1 clove garlic minced
2 green peppers cut into 1" pieces
2 tablespoons cornstarch
2 tomatoes peeled* and cut into eighths
1/4 cup cold water
3 to 4 cups hot cooked rice
*dip tomatoes into boiling water for 1 minute then cold water, peel with sharp knife.
Trim fat and bone from meat. Cut meat into 4 to 6 serving sized pieces. Spray frying pan with PAM and brown meat thoroughly on both sides. Remove meat from skillet.
Add onion to skillet and cook until tender. Add beef broth, soy sauce and garlic return meat to skillet, cover and simmer for about 10 minutes or until the meat is tender (this is steak so it won't take too long – do not overcook).
Add green pepper, cover and simmer another 5 minutes. Blend cornstarch and water in a small measuring cup (use a fork or small whip), gradually add the mixture to skillet stirring constantly until mixture thickens and boils. Boil and stir about 1 minute. Add the tomatoes and heat through. Serve over hot rice.
