Orange Cake

1 cup sugar
1/2 teaspoon salt
1/2 cup margarine
1 teaspoon baking soda
1 large egg beaten
2 cups flour
Skin of 1 orange grated
1 cup raisins (ground)
1 cup buttermilk

Cream margarine and sugar then add the egg, grated orange skin and salt. Sift the flour and soda then add alternately with the buttermilk to the margarine mixture. Spread in a greased 9 x 13 inch pan. Mixture will be thick.

Bake at 350 for 35 – 40 minutes or until a wooden toothpick inserted in center comes out clean.


Topping:

Juice of 1 large orange (about 1/4 to 1/2 cup)
1/2 cup sugar
Juice from 1/2 a large lemon

Mix the above ingredients and let stand until cake is done. Stir to dissolve the sugar then spoon evenly over cake. Top with whipped cream.
