Oven Crisp Trout

6 trout – cleaned
Salt and pepper
1/4 cup butter (softened)
1/2 cup fresh finely chopped parsley
1 egg
1/4 cup milk
1 teapoon salt
3/4 dried bread crumbs
1/2 cup shredded Swiss cheese
2 tablespoons butter


Wash and pat dry the trout. Sprinkle the body cavity with the salt and pepper.

In a small bowl combine the softened butter and parsley then spread the mixture inside the cavity of each of the fish. In a medium bowl beat the egg, milk and salt until well blended. In a pie plate or any large shallow dish mix the bread crumbs and the cheese. Dip each fish into the egg mixture then roll in the bread crumb cheese mixture – do each side of the fish. Arrange the fish in a greased shallow baking pan. Sprinkle any remaining crumb mixture over the fish. Do with the 2 tablespoons of butter.

Bake in a 500 degree oven for 15 to 20 minutes or until the fish are tender and brown. Serves 4 to 6.
