Scrambled Eggs
For each serving you will need two eggs and two tablespoons of milk and salt to taste.
1. Put eggs, milk and salt in a bowl and mix well with a fork or whisk.
2. Spray a heavy skillet with cooking spray.
3. Heat over medium heat until hot enough to sizzle a drop of water.
4. Pour egg mixture into skillet.
5. Mixture will begin to set at the bottom and side, lift very gently with a spatula until the uncooked portion flows to the bottom of the pan.
6. Cook until eggs are thickened evenly but still moist. This should take about 5 minutes maybe less for smaller servings.
