2 pounds large fresh shrimp
1 cup flour
1 large green pepper
3/4 cup dry sherry
1/2 cup olive oil
Salt and pepper to taste
*Important Note: Olive oil burns easily, it has a low flash point. Be very careful. Have baking soda and/or a wet towel on hand to extinguish the oil should it catch fire.
Clean and stem the pepper and cut into 1/4 inch pieces. Clean shrimp – remove shells and devein. Dip the shrimp in flour and fry in very hot oil* for about 5 minutes or until brown on both sides. Add salt and pepper to taste. Remove from pan.
Fry the pepper in the same oil for about ten minutes until soft. Add the shrimp and simmer for 2 minutes. Stir. Add the sherry; cover, cook 3 minutes over high flame*. Serve with broccoli and buttered rice.
