South Bay Cocoa Fudge Cake

1 2/3 cups all purpose flour (or 2 cups cake flour)
1 1/4 cups sugar
2/3 cup cocoa
1 1/2 teaspoon baking soda
1 teaspoon salt
1 1/2 cups buttermilk
1/2 cup shortening (I use margarine softened)
2 eggs
1 teaspoon vanilla

Heat oven to 350 degrees. Grease and flour a 13 x 9 pan or 2 round layer cake pans (8 or 9 1/2 inches) or a 12 cup bundt pan. Beat all ingredients in a large mixing bowl on low speed scraping bowl constantly (with a rubber spatula) for 30 seconds. Beat on high speed scraping bowl occasionally for 3 minutes.

Bake until a wooden toothpick inserted in center comes out clean. Bake the 9 x 13 pan for 35 to 40 minutes, bundt cake for 40 to 45 minutes. Cool. If you dare frost with:
