Spiced Crumb Cake

Mix-In-Pan (Crazy Cake) Spiced Crumb Cake

2 cups flour
1 cup brown sugar (firmly packed)
1/2 cup margarine or butter (melted)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon cloves
1 cup buttermilk *
1 teaspoon vanilla
1 egg

Preheat the oven to 350 degrees. Into an ungreased 8 or 9 inch square pan add the flour, brown sugar and melted margarine. Mix with a fork until the mixture looks like coarse crumbs. Remove 1 cup and set aside. Add the baking powder, soda, salt and cinnamon to the mixture in the pan. Stir with a fork to blend well.

In a small bowl or large measuring cup combine the buttermilk, vanilla and egg, blend well. Pour over the flour mixture in the pan and mix with the fork until smooth. Take a rubber spatula and scrape around the sides, corners and bottom to as to moisten and mix all ingredients. Sprinkle the 1 cup of crumbs evenly over the top of the batter. Bake in the preheated oven for about 40 to 50 minutes or until a toothpick inserted in the middle comes out clean. You can serve this warm or cool.

* Make your own buttermilk. Into 1 cup of room temperature milk stir in one tablespoon vinegar. Let stand 5 minutes.
