Stuffed Finger Rolls
4 hard cooked eggs (chopped)
1 can (4 ½ ounce) chopped ripe olives (drained) or
1/2 cup chopped ripe olives
2 tablespoons minced green pepper
2 tablespoons minced parsley
2 tablespoons shredded mild cheddar cheese
2 tablespoons minced onions (optional)
Mashed garlic or garlic powder to taste (optional)
2 tablespoons catsup
2 tablespoons olive oil
Salt to taste
8 finger rolls, soft French rolls or hot dog buns
About 1/3 cup shredded mild cheddar cheese
Preheat oven to 375 degrees.
1. In a bowl place the eggs, olives, green pepper, parsley and the 2 tablespoons cheese, onion and garlic (if used). Stir.
2. Add the catsup and oil. Blend well.
3. Cut off the tops of the finger rolls or French rolls. Set aside.
4. Scoop out the centers with a fork. If using hot dog buns they are split so just scoop out some of the center of both halves.
5. Fill the rolls with the egg mixture and sprinkle the filling of each with a part of the 1/3 cup cheese.
6. Replace the tops you cut off.
7. Wrap each roll in foil.
8. Place rolls on a baking sheet and place in preheated oven for about 25 to 30 minutes.
9. Serve immediately.
