Swedish Baked Apple Dessert
8 tablespoons butter or margarine
1 (10 ounce) package shortbread cookies (crushed fine)
1/2 cup sugar
2 teaspoons cinnamon
8 cups apples (about 8 medium apples) peeled and sliced.
1 tablespoon sugar
1 tablespoon lemon juice
Preheat oven to 375 degrees.
1. In a large skillet melt 6 tablespoons of the butter over medium heat.
2. Add the cookie crumbs, 1/2 cup sugar and cinnamon. Stir over heat for about three minutes.
3. Pour into bowl and set aside.
4. Add the remaining 2 tablespoons butter, sliced apples, 1 tablespoon sugar and lemon juice to the skillet.
5. Cover and cook over medium heat until the apples are tender which should be about 10 to 12 minutes. Stir often.
6. In a 1 1/2 quart casserole layer half of the apples and half of the crumbs.
7. Add the remaining apples and top with the cookie crumbs and top with the almonds.
8. Bake in the preheated oven for about 25 to 30 minutes or until the crumbs are a golden brown.
9. Serve warm with whipping cream or vanilla ice cream.
