2 cups hot green beans (cooked or canned)
2 or 3 strips bacon
1/4 cup minced onion
1 tablespoon flour
3/4 cup water (or canned bean liquid)
1/4 cup vinegar
2 teaspoons sugar
salt (to taste)
Dice the bacon and cook until lightly browned (use your kitchen shears). Pour off all the drippings and save 1 1/2 teaspoons. Return drippings to pan and add the onions and cook until tender, not browned. Slowly add the flour and blend. Add the water and vinegar then the sugar and salt, cook over low heat stirring constantly until the sauce is clear and slightly thickened. Add the hot beans and heat through for a few minutes to blend the flavors. Serve immediately. Makes about 3 to 4 servings.
