8 thick smoked pork chops
2 tablespoon vegetable oil (or spray vegetable or olive oil)
1 1/2 cups chicken broth (low sodium)
1/4 cup cornstarch
1/4 cup soy sauce (low sodium)
1/4 cup brown sugar (packed)
2 tablespoons vinegar
1 medium green pepper, cleaned and sliced
8 small onions, quartered
1 can (15 ounces) pineapple chunks (drained)
Brown chops on both sides in the vegetable oil (use a spray vegetable oil). Add the chicken broth, cover and simmer over low heat for 20 to 30 minutes or until they are tender. In a small bowl mix together the cornstarch, soy sauce, brown sugar and the vinegar. Add to the pan juices and chops. Stir as best you can until it thickens. Add the green pepper, onions and pineapple. Cover and cook over low heat for about 10 minutes until the onions and green pepper are tender. Serves 6 to 8. Serve with hot white rice.
