Trout with Anchovy

6 trout – cleaned
6 tablespoons olive oil
4 filets of anchovy (cut into small pieces)
1 cup dry sherry
Juice of 1 lemon
1 cup flour
3 tablespoons butter
1 teaspoon fresh mint (chopped)
1 teaspoon chopped fresh parsley
Salt and pepper to taste

Rinse and dry the trout then salt and pepper to taste, roll in the flour. Fry slowly over medium to low heat in the olive oil for about 10 minutes or until brown on both sides, the fish should be cooked through.

Melt the butter over low heat in a saucepan. Add the anchovy filet pieces, cook about 5 minutes. Add sherry then cover and simmer for 1 minute. Add the mint and parsley and simmer for 3 minutes. Add the lemon juice and stir.

Place the fish on a hot platter then pour the sauce over it. Serve very hot.
