Tuna Jackstraw Casserole - Quick, Easy and Delicious

1 can (4 ounce) can shoestring potatoes
1 can cream of mushroom soup
1 (6 or 7 ounce) can of tuna (drained)
2/3 cup evaporated milk
1 (3 ounce) can of mushrooms (drained)
1/4 cup pimiento (chopped)(optional)
1 can peas(drained)

Save 1 cup shoestring potatoes for top. Combine in a large bowl shoestring potatoes, mushroom soup, tuna, milk, mushrooms, peas and pimiento. Pour into a greased casserole. Arrange saved shoestring potatoes on top. Bake uncovered in a 375 degree oven for 20 to 25 minutes (or until thoroughly heated). Serves 4 to 6.
