Vegetables - From A to Z
The first thing I have to say about vegetables is buy organic whenever you can if not always. Wash them with a "safe" vegetable wash (get it in your local health food store), steam the ones that "steam" well, when frying use organic olive oil or an organic olive oil spray (your local grocery store has it).
Potatoes and squash are not the only veggies that can be done in the oven. However, avoid the microwave if you can and DO NOT USE PLASTIC in the microwave when you do use it. Heated plastic gives off dioxin that gets into the food. NO PLASTIC. When I was still living at home and we would accidentally melt plastic in the dishwasher and my father would have us evacuate the house. He told us that the melted plastic gave off a potentially dangerous poison – this was over 40 years and ago. He worked with metals and plastics.
We are urged to eat so many servings a day for health. What if you don't like some of these healthy foods? Eating them raw is another issue, with all the E-coli warnings around and the after-effects it's better to cook them. Most vegetables are available all year, at one time some were only available during the growing season. There are ways to make even the most disliked veggie taste good. Veggie taste is in the tongue of the taster – not everyone has the same taste when it comes to foods. For quite a few years baked potatoes have been jazzed up with broccoli, cheese, bacon bits, butter, sour cream, etc. Potatoes do not have a corner on the "Gee, this tastes good" market in the veggie world.
